Angling for some inside information on the fish and seafood market, the team from buying specialist Lynx Purchasing recently spent two days with specialist supplier Kingfisher Brixham in Devon.
The trip was an opportunity for Lynx to learn more about the range of fish caught freshly in UK waters, along with practical demonstration on how to prepare it, ensuring that caterers can get the best value.
Kingfisher is part of Direct Seafoods, a leading supplier to the hospitality industry. Rachel Dobson, managing director of Lynx Purchasing, said: “We have long-standing relationship with Direct Seafoods, and many of our customers serve fish supplied by them on menus and specials boards.
“However, our team has expanded over the last year, and we wanted to make sure everyone was up to speed.”
Highlights of the trip included attending Brixham Fish Market, where many west country fishing boats land their catch, as well as a visit to a crab processing plant in nearby Paignton.
“Kevin Weyman and the team at Kingfisher made us very welcome, and were happy to share their enthusiasm and market knowledge with us,” added Dobson.
“I definitely now know the difference between ling and John Dory, but more importantly we know there are more opportunities for operators to benefit from seafood sales, and we came away from the trip armed with the knowledge to have in-depth conversations with our customers.”
